cheesy chicken and broccoli casserole


1 package of fully cooked chicken chunks (Honey Roasted is ideal, but any flavor will work)

2 cups of fresh broccoli (substituting frozen is OK, too)

1 can of refrigerated crescent rolls

1 can of condensed cream of chicken with herbs soup

1 can of regular or low sodium/low fat condensed cream of chicken soup

1 cup of shredded sharp cheddar cheese


Pre-heat oven to 375.

Spray a 9x13 glass baking dish with cooking spray.

Separate the crescent roll dough into its pre-cut triangles

Place several pieces of chicken at the large end of the dough triangle and wrap the dough around the chicken. Repeat until all chicken and crescent rolls are used.

Place chicken and crescent packets into the bottom of the glass baking dish. Add broccoli (spread evenly throughout the pan). Cover with both cans of chicken soup, using a spoon or spatula to spread the soup over the entire dish. Finally, top with shredded cheese.

Bake uncovered for 20-30 minutes until broccoli is tender, crescent dough is fully cooked, and cheese is melted and beginning to brown.
