Farmer’s Market Salad

Great salad for lunch, can easily be doubled or tripled or more for larger groups. Travels well in zip lock bags to assemble off site events."


1/2 cup fresh lemon juice
2 teaspoons Dijon mustard
2 teaspoons kosher salt
Pinch of cayenne pepper
1/4 cup honey
3/4 cup olive oil
3/4 cup canola oil

Salad Ingredients (can be in any amounts, in parenthesis is what I use to serve 6):
Romaine lettuce (3 small heads)
Mixed greens (1 Dole mixed field greens bag)
Grilled chilled chicken breast (3 single breast, chopped)
Red seedless grapes (1 cup)
Grape tomatoes (1 pint)
Mandarin oranges (1 cup)
Cashews halves (1 cup)
Pecan halves (1 cup)
Golden raisins (1 cup)
Red onion, sliced thin in rings, for garnish


For dressing,
Combine listed ingredients together and shake well
For salad,
Mix all salad ingredients together and drizzle dressing to taste, coating evenly over salad
