Healthier Stuffed Bell PeppersUser Submitted Recipe
1 lb ground chicken
4 green bell peppers
1 package taco seasoning
1 package Uncle Ben's Cajun Ready Rice
16 cubes Kraft low fat cheddar and Monterey jack cheese
1 8oz can tomato sauce, divided
4 T water
Preheat oven to 350 degrees F. Brown chicken and drain off fat. Stir in half of tomato sauce, water and taco seasoning. Heat on medium for 2-3 minutes.
Stir in rice and remove from heat. Cut tops off of peppers and remove ribs and seeds. Add a small amount of meat mixture to each pepper. Then add 2 cubes of cheese to each pepper. Repeat this step one more time ending with meat on top.
Add the remaining tomato sauce to the tops of each pepper, dividing equally. Bake for 40 minutes.
