Swedish Meatballs

Small appetizer size (bite size) meat balls"


1 lb ea chopped beef, pork, & veal
1 lg onion chopped finely in food processor
Day old bread coarsely crushed in food processor
1/2 cup milk or cream
Salt and pepper to taste
1-2 tsp ground cardamom
1 tsp allspice
2 eggs
1/4 lb margarine for frying


Gently mix all meat together
Brown onions in cast iron fry pan, cool and then add to meat, add salt and pepper, cardamom and allspice. Soak bread in milk and shred into small pieces and add to meat, add eggs and mix all together gently but don't over mix. Fry one small flat sample to taste for seasonings, add more if desired. Fry all in margarine in cast iron pan on low to medium heat just til medium brown, don't overcook. For appetizers make these very small bite size.
When they are all done cooking place in casserole dish and make gravy out of drippings in the pan with flour and water, and add maggi or gravy master.
We serve these traditional Swedish style with lingonberries and Swedish potato pancakes, but they are great with cranberries, mashed potatoes or baked macarroni and cheese.
