My Italian boyfriend's crab cake
2 1/2 cups crab meat of Dungeness (about 2 Dungeness crabs)
1 cup Mayonnaise
1 tbsp dijon mustard
salt and pepper to taste
Green Onions (1 cup, chopped)
1 tbsp chopped thyme
2 tbsp chopped chives
1/4 cup breadcrumbs
Combine all ingredients except crab meat.
Then fold in the crab meat.
Scoop them into tiny circles.
Pan fry in peanut oil for 5 minutes each side or until brown.
