An Authentic Israeli Recipe
This is a wonderful protein packed afternoon snack or appetizer. It is vegan friendly and all natural. This particular recipe is clean, simple and slightly tangy, it makes a great summer treat."


3 medium cloves of Garlic
3/4 tsp. Salt
2 15oz. cans Garbanzo beans (rinsed and drained)
1/3 cup Tahini (well stirred)
1 cup pure mild Olive Oil
1/3 cup fresh Lemon Juice
1/2 cup Water (more or less to thicken)
several dashes of Hot Pepper Sauce
1/4 tsp. Cumin
1/4 tsp. Paprika
3 tsp. minced Coriander

*Fresh or toasted Pita and assorted vegetables for dipping.

*For flavored hummous add grilled or roasted red peppers, artichokes, or extra roasted garlic and process until smooth.


I recommend preparing this in a Cuisinart food processor.

Mince the garlic in the processor and add the salt. Add garbanzo beans and process till smooth. Add tahini and and pulse to mix. With machine running add olive oil in thin stream through the lid. Mix lemon and water and repeat process. Add seasoning (reserve paprika and coriander) and refrigerate until chilled.

To serve, garnish with coriander and paprika and plate with pita or vegetables.
