Potato cakes

These are a delicious new way to make potatoes. It is very kid friendly."
Ingredients
1 cup Mashed potatoes
1/2 cup All purpose flour
1/4 tsp of kosher salt
1/4 tsp baking powder
1 1/2 TBSP of butter
1 large egg, beaten
2 TBSP of freshly chopped parsley
Butter for Frying
Instructions
Put all ingredients except the butter for frying in a bowl and mix until well blended. Then knead the mixture on a floured surface for about 2 minutes to get out bubbles out. Roll the dough until it is a 1/4 inch thickness. Cut into 8 triangles or for a fun and/or festive shape you can use any cookie cutters that you have. Heat the butter on medium in a frying pan. Fry the cakes on each side until browned. Serve hot. These are great with dipping sauces like a cheese sauce, sour cream, even just a bowl of ketchup works.
