Sweet Potatoes


1 medium sweet potato (approx. 10 ounces), peeled and cut into 1⁄2-inch cubes


Place cubed sweet potato in a steamer basket to fit a 3- to 4-quart saucepan filled with one inch of water. Place the pan with a tight fitting lid over high heat. Once water starts to boil, reduce heat to medium. Steam sweet potato until completely soft; 20 minutes.
Place steamed sweet potato in the Cuisinart® food processor work bowl fitted with the metal chopping blade. Process for 30 seconds. Scrape sides of bowl and turn machine on for and additional 30 seconds adding 1 tablespoon of cooking liquid at a time to achieve desired consistency.
Allow mixture to cool. Store in refrigerator in airtight container for up to 3 days or fill ice cube trays or other 1-ounce containers to freeze.
