There are those times when I want whip up a meal where I can put something together from scratch, and still get it on the table lickety split...this is one of those recipes!
Chicken Paprikash
INGREDIENTS
6 boneless, skinless chicken thighs
2 teaspoons paprika
Salt, to taste
Pepper, to taste
1/4 teaspoon garlic powder
3-4 garlic cloves, crushed
1/4 cup butter
1 small onion, thinly sliced
1 jar (2.5 ounces) sliced mushrooms
1/4 cup chicken broth
Instructions
In a small bowl, mix together the paprika, salt, pepper, and the garlic powder. Set aside.

Place a sheet of wax paper down on your counter top. Then lay the chicken thighs on top. Put another sheet of wax paper over all of that, then start pounding the thighs until they're about 1/2" thick.

Remove the top sheet of wax paper, and toss. Sprinkle some of the paprika mixture over the top of the thighs. Flip the thighs over, and sprinkle the rest of the paprika mixture over that.

In a large pan, melt the butter over medium heat. Add the thighs to the pan, cover and cook for 10 minutes. Flip the thighs, then evenly spread the onions and mushrooms over top. Cover, and continue cooking for 10 minutes.

Remove the lid, and add the crushed garlic and chicken broth. Reduce the heat to low, and continue cooking for an additional 5 minutes.

Season with additional salt and pepper, if desired.
