Tuna RiceUser Submitted Recipe
3 Cups Uncooked Rice
5 Cups Water or Broth
2 Cans Albacore Tuna, drained (we can our own in Olive Oil, Salt and a mild chili)
1 Large Onion, chopped
3 Cloves Garlic, minced
2 Tbsp Olive Oil
Salt & Pepper
Over medium high heat saute the onions in the olive oil until translucent, add garlic and cook for an additional minute. Add the tuna and saute until heated through. Add water, salt, and pepper.
Bring to a boil, add rice and stir. Bring back to a boil for 1 minute, stir again.
Reduce the heat to low and simmer for 20 minutes covered. Resist the urge to peek, it will cook if you leave it alone. :)
Fluff with fork and serve with any side veggies you'd like.
If there are any leftovers the next day, simply saute some more onions in olive oil, add the rice and lightly toast in the pan, best part! Enjoy!
