Italilan Sausage Sandwiches


6 uncooked Italian sausages

1 Tbsp oil

1 large onion, cut into 1/2" strips

1 large green pepper, cut into 1/2" strips

1 tsp minced garlic

3 15-ounce cans crushed tomatoes

Salt and pepper to taste

6 hoagie rolls

1 8-ounce package shredded mozzarella cheese


Brown the sausages in the oil on all sides until juices are clear. Add the onions and peppers and saute lightly. Add the garlic, salt and pepper and tomatoes. Cover and simmer for approximately one hour. Remove the cover and simmer until the sauce becomes thick. Taste and adjust seasonings.

Put the sausages in the rolls, add generous spoonfulls of the sauce and top with cheese. Messy, but good!
