Sirloin Tips In Red Wine Sauce

3 Tbsp olive oil
3 cloves garlic, minced
1 1/2 lb sirloin cut into chunks or beef sirloin tips
8 oz fresh mushrooms, quartered
1 1/2 Tbsp tomato paste
Fresh cracked pepper
Italian seasoning grinder, 6 twists
1 cup red wine
1 1/2 cups low sodium beef stock or broth
3/4 cup flour
2 carrots sliced thinly
Bunch of fresh parsley, chopped
Mashed potatoes or buttered egg noodles (for 2-3 I reccomend half a package, use the whole package if you are feeding 4 or more)
Instructions
Cut beef into cubes. Drench in the flour then season with salt and pepper. In a Dutch Oven over medium/high heat, heat the olive oil and brown beef cubes with the garlic. Add mushrooms, carrots, tomato paste, salt, pepper, beef stock, Italian seasoning and red wine. Cook for 30 minutes or until beef cubes are tender. Serves with lightly buttered noodles. Top with chopped parsley.
