Apple Cider Rub


2 1/2 cups brown sugar
1/4 cup whiskey
1/2 cup apple cider (unpasturized)
1/2 cup (1 stick) unsalted butter softened
2 tablespoons chopped fresh sage
1 teaspoon cinnamon
Zest of 2 oranges
1/2 teaspoon nutmeg


Combine ingredients in blender and puree (should be a bit watery). Carefully separate the turkey skin from the flesh trying to avoid breaking the skin. Use your hands to work the mixture under the skin covering the flesh. Replace skin and rub the mixture outside of the turkey skin. Roast your turkey according to your recipe.
