Simply Delicious Lasagna

Gluten-free and super easy to shop for!

Easy to shop for, simple to assemble. Your Cuisinart Food Processor with steel blade is a must have to prepare this simply delicious, vegetarian and gluten-free lasagna.



You will need:
1 square glass baking dish (8 X 8 or 9 X 9)
1 piece aluminum foil to lightly cover pan

Shopping List:
1 box Organic Brown Rice Lasagna Noodles: Cooked and cooled according to box directions
or use the no boil lasagna noodles if pressed for time
1 jar sauce
1.5 lb (no added sugar)
1 ball fresh mozzarella, sliced
1 package sliced provolone, 8 slices
2 - 3 large leaves kale, stripped off stem and very finely chopped in food processor
Pesto, about 1/2 of a 7 oz. container
1 cup water (for no boil noodles, and to rinse jar)


Directions: Spray pan with organic non-stick olive oil spray. Spread sauce on bottom of pan to just coat evenly. Place 4 - 5 lasagna noodles, overlapping slightly on top of sauce. Place layer of fresh mozzarella, then provolone, then some pesto, then chopped kale, then a little sauce, a little water and then 4 - 5 more noodles. Repeat step 4. Top noodles with remaining sauce & water. Cover loosely with foil. Bake 45 - 60 minutes, until nice and bubbly. Remove from oven and let sit about 5 – 10 minutes before serving. Serve with Glorious Greens Saute or a leafy green salad! This recipe easily adapts to food service size.
