Salmon Rice Patties

Delicious way to use leftover salmon or you can use a can of tuna drained. Yummy!"
Ingredients
8oz of cooked salmon
1 egg beaten
1/2 cup cooked rice
1/2 cup chopped onion
1/4 grated parmesan cheese
1/4 cup pancake mix
1/4 cup chopped green pepper
salt/pepper to taste/parsley
oil for frying
Instructions
In large mixing bowl combine all ingredients well except oil. Make into patties. In large skillet over medium heat, heat enough oil to cover the bottom. Drop patties into hot oil, flatten slightly with spatula to about 1/3 inch thickness and fry 6 to 7 minutes on each side or until golden and firm. Makes about 7 or 8 patties.
Note: Leftovers make delicious sandwiches, served cold or warm.
