Blackened Shrimp Skewers
User Submitted RecipeTasty shrimp skewer dish. The mango and lemon give it a sweet and sour taste. Serve 2 skewers per person crossing them on the plate over the rice.

Shrimp, 16-20 count
Paul Prudhomme's Blackened Red Fish
Sweet Onion
Mango
Bell Pepper
Lemon
Salt
Pepper
Skewers
Cooked rice.
Instructions
Peel and devein the shrimp leaving tails on. Dust the shrimp with blackening. Slice the onion into 1" by 1" cubes. Slice the bell pepper removing seeds and white meat into 1" by 1" cubes. Slice the mango into 1" by 1" by 1" cubes. On the skewer place the above as bell pepper, mango, shrimp, onion. Continue the above for a total of three times. Squeeze lemon juice over the entire skewer. Sprinkle with salt and pepper. Place on hot grill turning over about every minute. Cook until shrimp is done. About 5 minutes. Serve over rice.
