Marinated Pork Tenderloin

Ingredients
1/4 cup soy sauce
1/4 cup packed brown sugar
2 tbsp. Sherry
1/4 cup minced onion
1 tsp. ground cinnamon
2 tbsp. olive oil
1 clove garlic chopped
1-1/2 lb.. pork tenderloin
apple sauce for serving with pork
Instructions
Combine soy sauce, brown sugar, Sherry, minced onion, cinnamon, olive oil, and chopped garlic in a large resealable plastic zip lock bag. Seal, and mix together. Add pork tenderloin, seal and marinate in the refrigerator for 6 to 12 hours.
Preheat grill for high heat using a three burner BBQ.
Use indirect heat by turning off middle burner leaving outer two burners on medium heat and place pork tenderloin over middle burner.
Roast with lid closed for approx. 1 hour basting with remaining marinade. Turn meat over after 30 minutes and baste again. It will be done when meat thermometer registers 71 degrees for medium or 77 degrees for well done.
Let Pork Tenderloin rest for 5 to 10 minutes then cut into medallions and serve with apple sauce.
