Skinless salmon fillets
Creole seasoning (Zatarains
Coat salmon fillets with olive oil. Sprinkle both sides with creole seasoning. Coat both sides with liberal amount of brown sugar. Let stand at room temperature for 1/2 hour for seasoning to soak in. Cook on medium grill for 10 minutes per inch of thickness, turning once during cooking time, until moist and flaky. DO NOT OVER COOK.
