Kielbasa
Heat coconut oil over medium to low heat, (not high) Saute Kielbasa, potatoes, onion and Bell peppers, put lid on and simmer for about 10 minutes, then add all the other ingredients. This dish is simple but oh so delicious. You can also add a frozen vegetable mix. Whatever you like. Also you can use lite or Turkey.

4 Potatoes
1 med. Onion
2 Bell Peppers, any color
5 Summer Baby Squash
8 Mushrooms
Sea Salt to taste
Pepper to taste
2 tablespoons Coconut Oil
Instructions
Cut Kielbasa in small diagonal pieces. Cut Potatoes in small cubes, Onions in strips, Bell peppers in strips, Summer baby squash in half, Mushrooms can be whole if small or just cut in quarters.
