Seafood cake / fritter


1 lb seafood meat (Crab, Shrimp, Lobster)
1/2 - 1 cup bread crumbs
1/2 cup mayonnaise
1 egg – slightly beaten
1 pepper (1/2 green, 1/2 red) fine chop
1 small onion or shallot – fine chop
1/2 - 3/4 tsp Garlic power
1/4 - 1/2 tsp Salt
1/4 - 1/2 tsp Pepper
2 tsp Old Bay Seasoning
Dash or small pinch of Cayenne Pepper
1/2 lemon – juiced
1/2 - 1 tsp brown or Dijon mustard
Flour for dusting
1/2 cut of vegetable oil or Light Extra Virgin Olive Oil


Combine all the ingredients except the flour and oil. Once mixed hand make the cakes in about a 3 inch ball and flatten out. Pre-heat vegetable or light Extra Virgin Olive Oil (med heat) in a skillet, dust the cakes with flour and cook in the oil till golden brown, about 2-3 mins. each side. When done set on a plate with paper tower to absorb the excess oil off. Plate cakes with the remaining lemon cut into wedges and fresh parsley for garnish.
