Zesty Tacos with Fresh Salsa

I come up this recipe after tasting under seasoned taco meat. I want to create a recipe with lots of spice and flavor. I take this dish to potlucks and everyone loves it."

Ingredients

2 pounds of ground beef
1 Large white or yellow onion chopped
4 Cloves of garlic minced
1 jalapeno (seeds and ribs removed if you don’t like the spice)
28 ounce can of crushed tomatoes (do not drain)
3 tablespoon of chili powder (New Mexico chili powder available in the Latin aisle)
1 tablespoon each of cumin, coriander, and oregano
Salt and pepper to taste
1/2 cup of fresh cilantro, chopped
Corn Tortillas
Fresh salsa (recipe below)
Mexican style cheese

Fresh Salsa
1 medium white onion, quartered
2 peeled cloves of garlic
1 jalapeno remove stemmed
5 medium plum tomatoes quartered
1/2 cup of fresh cilantro, chopped
Juice of 1 lime
Salt to taste


Instructions

1)In a large skillet over medium high heat add a tablespoon of vegetable oil and saute ground beef, onion, garlic, jalapeno for 10 minutes or until ground beef is browned and onions are soften.
2)Add seasonings (cumin, chili powder, coriander, and salt and pepper) cook until fragrant and combined.
3)Add tomatoes cook until all liquid is evaporated.
4)Remove from heat and add fresh chopped cilantro.
5)Serve with Corn Tortillas, fresh salsa, and cheese

To prepare Corn tortillas: pre-heat oven to 400 degrees. Spray corn tortillas with cooking spray, place on baking sheet (in one even layer) and cook for only 10 minutes until soften.

You can use this taco filling for nachos, and burritos, etc.

Fresh Salsa
1 medium white onion, quartered
2 peeled cloves of garlic
1 jalapeno remove stemmed
5 medium plum tomatoes quartered
1/2 cup of fresh cilantro, chopped
Juice of 1 lime
Salt to taste

1)Put onion, garlic, jalapeno to food processor pulse into a medium chopped.
2) Add plum tomatoes, cilantro, lime juice and salt to food processor, pulse ( about 20 seconds) until well combined.
3)Serve at room temperature. Refrigerate leftovers
