a quick easy chicken and veggies meal
12 Roma Tomatoes
1 large sweet onion
1/2 cup olive oil
4 large chicken breasts cut into cubes
1 container sliced baby bella mushrooms
6 cloves of garlic, finely chopped
2 large wooden spoons of butter (or margarine)
1 box spaghetti noodles
3 tablespoons soy sauce
Basil, Red Pepper and Oregano to taste
Dice and peel the tomatoes and onion. Combine with mushrooms, garlic, basil, red pepper, oregano and olive oil in large skillet.
In a separate skillet combine butter or margarine and chicken.
Cook the chicken until it is cooked all the way through and add to tomato and onion mixture. Once the tomatoes and onions begin to soften add the spaghetti noodles with just enough water to cover the ingredients. Reduce to medium and cover. Stir occasionally until spaghetti noodles are al dente.
