These "balls" flatten out to look like cookies but are very savory and without gluten or lactose. High in protein and very low in fat. Delicious with a lemon tahini sauce or condiments of your choice.
Tofu Balls - gluten free
INGREDIENTS
1 cake of firm tofu
1 chopped red onion
1/2 c roasted Tahini
2 eggs
1/2 c chopped fresh parsley
1/4 c Tamari
2 T dark sesame oil
juice from 2 limes
pinch of cayenne
1/2 t curry powder
ground pepper
1/2 c light white rice flour
Instructions
Starting with the tofu add each ingredient to the Cuisinart processor and mix well, then let the mixture rest for 30 minutes in the refrigerator. Put parchment paper on a cookie sheet and use a scoop to put single portions on the paper, much like making cookies. Bake these at 350 degrees for 30-45 minutes until they are golden brown.
