Apricot almond chicken salad

from the Biltmore cafe in Ashville, NC - yum


1 whole roasted chicken
2 stalks celery
1/2 cup sour cream
1/2 cup mayonnaise
2 ea thyme sprigs chopped
1.5 cup dried diced apricots
1/2 cup toasted slivered almonds
3 TB Dijon mustard
4 ea minced garlic cloves
1 bunch parsley, chopped
1/8 cup red wine vinegar


Remove meat from chicken and cut into bite-sized pieces. Add all ingredients together and mix well. Season to taste. Serve on a croissant.
