If you're on a restricted diet, summer holidays can be a real challenge. But "Healthy" doesn't have to mean "Bland" with this tasty dish!

Ingredients
1 block tofu
1 head broccoli
1/2 an onion, chopped
2 cups white rice
Marinade:
2 cups soy sauce
2 cloves garlic, chopped
Instructions
In a large bowl, mix soy sauce and garlic. Chop tofu into 1-inch squares, then add to bowl and cover in marinade. Cover bowl in saran wrap and leave to marinade for at least one hour.
Pour rice into a rice cooker and add as much water as called for by the manufacturer's directions.
On a large cutting board, trim broccoli into florets, and place into a metal steamer with the chopped onion. Pour tofu into a colander, draining marinade, and layer on top of vegetables in the steamer. Place into a medium pot half-filled with water and bring to a boil. Steam until broccoli is tender. Serve on top of rice.
