An easy stuffed pepper dish using basic ingredients. Can be made a few hours ahead. Great by itself for a light, evening meal. Add salad and grilled chicken breast for heartier appetites."
Ingredients
3 cups cooked white rice
1 lb hamburger, browned and drained
1 1/2 cups Mild Salsa
2 cups shredded cheddar or Monterrey Jack cheese (divided)
1 tsp garlic salt
1 tbsp chili powder
1 tbsp cumin
6 -8 medium sized bell peppers
Instructions
Cook rice according to directions and set aside to cool.
Brown hamburger and drain off fat.
Mix hamburger, rice, salsa, 1 1/2 cups cheese and spices in large bowl.
Preheat oven to 350
Cut tops off of peppers and remove seed pods and membrane being careful to keep top intact.
Stuff peppers tightly with hamburger rice mixture.
Place small amount of cheese on top of pepper, then place top back on pepper.
Place stuffed pepper in greased baking pan.
Bake in 350 degree oven for about an hour.
