Mediterranean Cheese Toasts


1/2 Cup Mediterranean olives, pitted and finely chopped
2 Tsp capers, drained and finely chopped
4 Anchovy fillets, finely chopped
1 Tbsp dijon mustard
1 Loaf french bread (16 oz)
6 Fresh mozzarella cheese balls (1 1/2 ounces each), cut into very thin slices.


Preheat broiler. In small bowl, mix first 4 ingredients. With serrated knife, cut bread into 60 very thin slices. Place half of bread slices in 15 1/2'' by 10 1/2'' jelly-roll pan; broil 1 minute, or just until golden. Cool on wire rack. Repeat with remaining bread slices. Place 2 slices cheese on toasted side of each bread slice; top with about 1/4 tsp olive mixture.
