Chicken SpecialUser Submitted Recipe
Chicken breast (4 pounded thin)
Bread Crumbs (enough to cover the chicken breasts)
Olive Oil (1 tbsp)
White Wine (1/2 cup)
Lemon (1, sliced)
Lemon Juice (1/4 cup)
Capers (1 tbsp, optional)
Salt to taste
Pepper to taste
Pound the chicken breasts thin.
Put bread crumbs in a ziploc bag and add the chicken. Shake to cover.
Heat olive oil in a pan over med-high heat.
Add the chicken breasts, sprinkle top side with salt and pepper to taste, brown on both sides then remove from heat.
Add lemon juice and white wine, cover until it thickens.
Re-add the chicken and cover, cooking 10 minutes on one side, remove the cover and add lemon slices and capers. Cook 6ish more minutes, or until done.
Remove, and ta-da. Delicious dinner. My mom usually serves it with a salad and either green beans or broccoli
