Jane's Chicken Ole

Lots of mothers have memories of how beautiful their daughters looked on their wedding day. One of my memories of my wedding day is just how gorgeous my mom looked and how she pulled everything off so that I could have a very special day. She made it seem so effortless. It's been 19 years and I still remember her elegance that day:) Thanks Mom!"

Ingredients

2 cups cooked chicken, chopped
4 cups cooked egg noodles
1/4 cup chopped green onion
1 can (4 oz.) green chilies
2 carrots grated
1 can cream of mushroom soup
1/2 cup chicken broth
2/3 cup sour cream
1 cup grated cheddar cheese
1/2 cup grated Parmesan
1 cup bread crumbs


Instructions

Preheat oven to 375 degrees. Mix all ingredients except for the the bread crumbs in a large bowl. Spray a 2-quart casserole dish with non-stick spray. Spoon chicken mixture into dish. Spread evenly with bread crumbs (My mom sometimes tops it with 1 cup crushed tortilla chips in lieu of the crumbs.) Bake at 375 for 25-30 minutes.
