Pad Thai Rice and Veggies

Delicious and healthy vegetarian meal that the whole family will love."


1 cup Brown Jasmine Rice
3 cups vegetable broth or water
2 teaspoons ghee or butter
4 cups chopped vegetables: onions, broccoli, sugar snap peas, peppers, carrots, etc.
2 tbsp. soy sauce
2 tbsp. peanut butter
2 tbsp. water
2 teaspoons chili sauce


Cook rice in broth or water; add ghee before placing lid on pot.
Coat a large saute pan with olive oil and add onions; cook til translucent and add rest of veggies. Cook until softened. In the meantime, combine soy sauce, water, peanut butter and chili sauce, whisking til smooth. Coat veggies with sauce. Serve with rice. Yum!
