4 chicken cutlets-pounded to 1/4
1 box frozen chopped spinach-thawed,or 1 bag fresh baby spinach-cooked till wilted.
1 container Boursin cheese-light is good
1 small onion
1 large garlic clove
1/2 tsp. oregano
salt and pepper
1/2 cup panko crumbs
3 tbs. grated parmesan
1 beaten egg
1/2 tsp. paprika
Pound chicken cutlets to 1/4"-set aside.
Spinach-squeeze all the water out.
Saute chopped onion and chopped garlic till tender, stir in oregano, salt and pepper. Add spinach-mix well.
Spread Boursin on one side of chicken, top with small amount of spinach mix--roll up cutlets.
In one small bowl-beaten egg with 1 tbs. water. In second bowl- panko crumbs,with parmesan cheese and paprika.
Dip each cutlet in the egg mix, then roll in crumbs. Place in 13 x 9 baking pan. Spray with butter flavored pam or drizzle with butter.
Bake uncovered 350* for 30 minutes. If you have some leftover Boursin, put it on top of cooked cutlets as soon as they come out of the oven.
