Laura's Tater-tot CasseroleUser Submitted Recipe
1 tbs spoon of olive oil
1 medium onion
2-3 cloves of garlic
1 lb of ground turkey meat (I prefer lean)
1 can of Cream of Potato Soup
1/2 cup of sour cream
1 bag of tater-tots
1 cup of shredded cheddar cheese
Preheat Oven to 350 degrees.
1.In a large skillet over medium heat, add olive oil and onions. Cook until onions begin to become translucent, about 5-7 minutes. Next add garlic and cook for about 1 minute.
2. Next add ground turkey, cook until all the meat is brown.
3. After all meat is browned lower heat and add the can of cream of potato soup and the sour cream. Cook until all ingredients are simmering nicely together. Remove the mixture from heat and set aside.
4. In a large casserole dish(I use a 9x13 glass pan)put in the bag of tater-tots (try to fill in any holes so that you have a solid bottom. Next pour the meat mixture evenly over the tater-tots.
5. Finally put the cup of shredded cheddar evenly over the top of the meat mixture. Pop the casserole in the over for about 30 min (or until all of the cheese is melted and bubbling and you see that the tots are brown). Take out of the oven, serve and enjoy!
