Asian Chicken Salad

Great dinner salad!"


2 romaine hearts, shredded
½ napa cabbage, shredded
1 C. grated carrot
1 small red pepper, diced
2-3 cooked chicken breasts, chopped or sliced
¾ - 1 C slivered almonds, toasted *

rice noodles (I use La Choy)
Paul Newman’s Low Fat Sesame Ginger Dressing


Mix top set of ingredients together. Top with rice noodles. Add dressing to taste and toss well.

*To toast slivered almonds, arrange them in a single layer on a baking sheet. Bake in a preheated 350 degree oven for 8-10 minutes or until lightly golden. Cool completely before using.
