Chili

Ingredients

1 large onion, chopped
1 green pepper, chopped
1 tbspn minced garlic
3 lbs ground beef
1 pound boneless chuck, trimmed and cut into 1/4-inch cubes
2 cans petite diced tomatoes, undrained
1 can diced tomatoes with chili peppers, undrained
3 cans dark red kidney beans
3 beef bouillon cubes
1 cup water
1/2 bottle of beer
1 6oz can tomato paste
2 bay leaves
1 tablespoon vegetable oil
2 tablespoons chili powder
1 tablespoon ground cumin
1 teaspoon oregano
1 teaspoon salt
1 teaspoon pepper


Instructions

Brown the ground beef, drain, set aside. In the same pot, brown the chuck steak, then set aside.

Add 1 tbspn vegetable oil. Saute the onion, green pepper and garlic until tender, about 3-5 minutes. Return beef and chuck to the pot. Pour in the beer and water. (If you don't want to use beer, you can substitute water). Add beef bouillon cubes, tomatoes, tomatoes with chili peppers, and tomato paste. Stir. Then add seasonings, including chili powder, cumin, oregano, salt, pepper and bay leaves. Add beans and stir. Bring to a boil, then reduce heat and simmer for 30 minutes. Adjust any seasonings to taste. Remove bay leaves.
