16 oz Package Dried Red Kidney Beans
2 lbs Link Sausage
one Medium Onion
One Bell Pepper
1/2 cup all-purpose flour
1/2 cup vegetable or peanut oil
Soak beans overnight in water. Drain, rinse, and place into slow cooker. Chop onions and bell pepper and set aside. Slice sausage into 3/8 inch slices. In a cast iron skillet, heat oil. Brown sausages in oil taking care to not do too many at one time. As each batch is finished, place into slow cooker. Using oil and drippings from the sausages, add flour. Stir constantly until flour is dark brown. This is a roux. Add roux to slow cooker. Add remaining ingredients. Fill with water to 1/2 to 3/4 of an inch above ingredients. As Cajun seasoning to taste. Cook on low for 8 to 10 hours. Ladle over prepared rice.
