Scallops w/Lemon Butter Sauce

Make Ahead: Prepare the scallops to cook – fry them right before serving, in a large pan it will only take a couple of minutes per side

Tip: Make additional sauce with extra butter, olive oil and lemon and add to pasta for a complete meal."


8 Large Sea Scallops
1/2 cup Seasoned Bread crumbs
1/4 cup Parmesan Cheese, grated
3 T Olive oil
Lemon zest and juice of 1 lemon
1 Clove of garlic, minced
3 T Butter
Salt & Pepper


Rinse and pat scallops dry with a paper towel. Mix bread crumbs and Parmesan cheese and dredge scallops in bread crumb mixture to thinly coat. Add olive oil to a large pan, over medium-high heat, add scallops and cook on each side about 3 minutes. Remove from pan to serving plate. Add butter, garlic, lemon zest and just, cook until combined and garlic is soft. Pour over top of scallops, add salt and pepper and serve.
