Chicken boat sandwiches

Hot chicken salad baked in a small french bread loafs"

Ingredients

chicken
celery
onion
garlic
swiss cheese
sharp cheddar cheese
mayonnaise
salt & pepper to taste
poultry seasoning
individual french bread loaves


Instructions

Lightly saute in oil 4 chicken breasts cut into cubes w/poultry season, onion & celery until tender, add garlic (to taste)
Mix in 1/2 cup mayo until creamy, add 1/2 cup each of cheeses - mix well until all is blended
scoop out center of individual french loaves (to make a boat)
Stuff chicken mixture into each loaf. pull soft bread off the centers and use these as tops.
bake @ 350 for 20 mins or until chicken is brown & bubbly
