Cindy's Fish in Coconut SauceUser Submitted Recipe
3 large fillets of fish
2 Peppers (green and red)
1 tsp crushed garlic
1 tsp powdered annatto
4 cups coconut milk,(I use lite)
2 Tbsp. chopped cilantro
4 Tbsp. olive oil
1 onion cut into strips
Salt and Pepper to taste
You may use your fish of preference, any type of white fish. Score diagonal cuts on the fish. mix the garlic, annatto, & salt/pepper and smear all over fish. Heat oil in a shallow pan and
Sautee Fish, then add chopped peppers and strips of onion then add coconut milk & Cilantro. Simmer to reduce liquid to 1/2, serve hot. Taste, add salt to taste with fresh chopped cilantro on top. May throw some chopped tomato on top for flavor and additional color.
