Beef & Broccoli

1 lb beef sirloin (boneless)
2 bell peppers (green, red or yellow)
1 cup beef broth
2 broccoli stalks
3 Tbs low sodium soy sauce
2 Tbs honey
1 1/2 Tbs fresh ginger peeled & minced
2 garlic cloves peeled & minced
1/2 tsp red pepper flakes
2 tsp cornstarch
3 or 4 Tbs vegetable oil
Cooked rice
Instructions
1. Slice beef in to thin slices. About 1/4 of inch or so and 2 inches long. Cut the large stalk off of the broccoli, leaving the florets. Cut bell peppers into thin slices and put aside. In a bowl mix the broth, soy sauce, ginger, garlic, honey, red pepper flakes and cornstarch. Set this aside as well. Heat half of the vegetable oil in a wok or skillet on medium high. Stirfry the beef until brown all over. Remove and set aside. Wipe out pan and add remaining oil. Stirfry the broccoli and peppers about 4-5 minutes or until desired crispness. Add the cooked beef and sauce. Mix everything together and simmer on low. Stir until sauce is slightly thickened. Serve over rice.
