Turkey & Black Bean Burgers

Ingredients

2 tablespoons extra-virgin olive oil
1 can black beans, drained
1/2 pound ground turkey
1/2 cup bread crumbs
3 cloves garlic, grated or minced
1 teaspoon chili powder
1/2 teaspoon onion powder
Salt and freshly ground black pepper
1 cup frozen corn
1 ripe avocado
6 hamburger buns
1 1/2-2 cups shredded Monterey Jack


Instructions

1. Add olive oil to a grill pan or large skillet over medium-low heat. Mash black beans in medium bowl. Add ground turkey, bread crumbs, corn, garlic, seasonings, and a drizzle of olive oil; combine. Form six patties. Place in pan; cook 4-6 minutes on each side or until browned and cooked through.

2. Turn on broiler. Place split hamburger buns on cookie sheet, inside up; top bun bottoms with cheese. Place under broiler until cheese is golden and bubbly and buns are toasted. You may have to pull out bun tops before cheese-covered ones. Watch closely.

3. Serve burgers topped with avocado slices.
