Elegant Shrimp Creole

Shrimp and sauce over rice with Romano cheese on top."


Crushed Garlic to taste but at least 2-3 cloves
2-3 TBS Olive Oil
1 Medium Onion sliced lengthwise
2 lbs uncooked shrimp any size tail on. remove tails and save.
Salt & pepper to taste
2 cups white long grain (not instant) rice prepared.
Romano cheese for grating


Saute garlic and onions in olive oil until tender. Season with salt and pepper. Add crused tomatoes and some of the reserved shrimp tails. Stir togehter until heated through. Add shrimp (can also use scallops or both) cover and cook until shrimp are firm but tender (about 5 min for medium shrimp) Remove tails from sauce with slotted spoon. Pile prepared rice on plate, spoon shrimp and sauce mixture on top of rice, grate fresh romano cheese on top, serve with salad and crusty Italian or French bread and white wine. Yum. This makes a very elegant meal to serve guests or for special occasions that is very easy to prepare.
