Hearty chickpea burgersUser Submitted Recipe
with spicy lime-cilantro aioli
For chickpea burgers:
1 inch piece of ginger
1 clove garlic
2 slices whole-wheat bread
1/3 cup unsalted sunflower seeds
1 can chickpeas, drained & rinsed
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon cumin
2 tablespoons olive oil
1/4 cup mayo
1 tablespoon cilantro, chopped
juice of 1/2 lime
hot sauce (prefer Chalula)
In a Cuisinart food processor, process shallot, ginger and garlic until finely chopped. Add torn bread and pulse until consistency of bread crumbs. Add chickpeas, salt, pepper and cumin. Pulse until roughly chopped. Remove 1/2 of the mixture. Add egg to remaining mixture and process until smooth. Add smooth mixture to roughly chopped mixture and combine. Score the mixture and make 4 patties of equal size. Brush patties with 1 tablespoon of olive oil on both sides. Heat remaining olive oil in a pan on medium-high heat. Add patties and cook on each side for 4 minutes.
Meanwhile, whisk together mayo, cilantro, lime juice and hot sauce.
Place a dollop of aioli on each burger. Great as is, or if desired, place on burger bun with lettuce.
