Shrimp Sautee


Shrimp with Steamed Green Beans & Cauliflower (Low-Carb)
Shrimp tails sauteed with steamed green beans and cauliflower rice (in lieu of traditional steamed rice)"

Ingredients

2 Large Skillets
1 Veg Steamer
1 Medium Microwave Safe Dish with Lid
1 Pound Med Shrimp Tails (peeled/deveined)
1 Green Bell Pepper (medium chopped)
3 Stalks Celery (medium chopped)
1 Med Onion (medium chops)
1 Head Cauliflower Florets (in lieu of rice)
1 Pd Green Beans (trimmed & rinsed)
3 Tbsp White Cooking Wine
3 Tbsp Water
Grapeseed Oil
Garlic Powder
Ground Basil
All-Purpose Seasoning of choice


Instructions

SAUTEE VEGS (Referred to by Cajuns as "Holy Trinity", which is the base of nearly all Cajun meals) (cook time: 15-20 mins):
1. Line large skillet with preferred cooking oil (we use Grapeseed Oil)
2. Combine Green Bell Pepper, Celery, Onion in Cuisinart Food Processor and chop to fine.
3. Place Vegs in pan on med/high heat.
4. Add water and heat until slightly boiling then simmer with lid.
5. Stir occasionally until veg mix is soft (15-20 mins).
6. Remove from heat.

GREEN BEANS (cook time: 10-15 mins):
1. Place green beans in steamer and steam for 10-15 minutes, or until cooked soft
2. Remove from steamer

SHRIMP (cook time: less than 10 mins):
1. Line large skillet with preferred cooking oil (we use Grapeseed Oil)
2. Place shrimp in large skillet
3. Season with Garlic Powder, Ground Basil, and All-purpose seasoning of choice.
4. Add white cooking wine and
Sautee Shrimp turning to make sure both sides are cooked evenly.
5. Remove from heat

CAULIFLOWER (in lieu of cooked rice):
1. Place cauliflower florets in food processor and grind to fine.
2. Place cauliflower in microwave-save casserole dish and cover with lid.
3. Cook on High for 4 minutes.
4. Remove and fluff as rice.

SERVING:
1. Place layer of steamed cauliflower on plate (or steamed rice)
2. Add veg mix on top of steamed cauliflower
3. Add steamed green beans on top of veg mix.
4. Add shrimp tails on top of green beans.

Serves: 4
Approx cooking time: 30 mins
