Artichoke Heart Squares


2(15)oz.cans artichoke hearts well drained
6 Tbs. butter
1/2 c. bread crumbs
2 medium onions,chopped
9 large eggs beaten
1/2Tsp crumbled oregano
1Lb sharp cheddar cheese, shredded
2Tbs minced parsley
optional, salt & pepper to taste


Preheat oven to 350 degrees.
Coarsely chop artichoke hearts and place in a large bowl. Melt butter in a 10" skillet. mix 2Tbs with the bread crumbs and reserve for topping. Saute the onions in the remaining butter just until soft, combine onions and rest of the ingredients with the artichoke hearts, mix well. Pour into a 9X13 glass pan, top with bread crumbs, and bake for 30 mins,,
