This recipe is great because it pulls in all of the food groups and takes less than an hour. Once everything has been cooked, combine the sautéd vegetable mix and the tomato paste and ground beef/tvp and stir until there is an even distribution of the mix. Once the rice is finished, pour the mix over the rice and you are done. Enjoy!"
Ingredients
Tomato Paste (or your favorite pasta sauce if you are in a rush)
Mushrooms
Yellow squash
Broccoli
Zucchini
Garlic
Ground beef or tvp (textured vegetable protein)
Brown rice
Olive oil or olive oil Pam
Instructions
Sauté the garlic first in either the Pam or Olive Oil, next add the mushrooms, then add the broccoli and last add the squash and zucchini. In a separate pan sauté the ground beef/tvp and add in the tomato paste. In a 3rd pot, cook the brown rice.
