turkey(or chicken) enchilada casserole

Delicious enchiladas without all the work!"


2 cps. cubed, cooked turkey (or chicken)
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 can(7 to 7&1/2 oz.)diced tomatoes w/roasted garlic
3 tsp. cumin
2cps. sharp cheddar cheese(grated)
3/4 cps. chopped onion
12 corn tortillas,quartered
salt & pepper to taste


Stir together first five ingredients in a saucepan.
Heat through.
In a 13" x 9" baking dish, layer all ingredients in the following order:
tortilla quarters, chicken/sauce mixture, onion, cheese.
Repeat layers, ending with a generous layer of cheese.
Bake at 350*, until cheese is melted, and dish is heated through.
