Peg's Pork Chop Casserole

Pork chops with potatoes, onions and tomato sauce. Add a salad for a complete dinner. My sons now have their wives cook it for them. It’s the best!!"

Ingredients

6-8 large pork chops
10 potatoes
3 onions
1 can of crushed tomatoes
or use Cuisinart mixer to use fresh tomatoes
salt and pepper to taste


Instructions

I first turn the oven to 350 degrees and place the pork chops to bake for 15 minutes, this is done to get rid of the grease.
Slice the potatoes and onions, about 1/8" thick or to desired thickness
Drain grease, place the pork chops back in pan, add potatoes and onions, pour crushed tomatoes plus 1/4 of can with water. Add salt and pepper
Cover with foil and bake 1 hour, remove foil and let cook 15 minutes more
I like it when the potatoes turn orange because it has soaked up the tomatoes
A fast and easy dinner, I would get home from work, put this in the oven and have the kids do their homework while it’s cooking, my kids love it!
Note: If using fresh tomatoes, place in Cuisinart mixer, chop up about 12 tomatoes
