Chicken StewUser Submitted Recipe
2-3 Chicken Breast Halves (Boned & Skinned)
1 can Sliced Carrots
2 cans Creamed Corn
1 Pkg. Sliced Mushrooms
1 Medium Sweet Onion
2 Tbsp. Garam Masala (Indian Spice Mixture found in the International Aisle of your supermarket)
Salt/Pepper - to taste
Extra Virgin Olive Oil
Pour 4 Tbsp. oil into skillet on medium heat. Add 1 Tbsp. Garam Masala. Chop onion and mushrooms. Add to mix. Saute for 5-6 minutes on medium heat. Add a pinch of salt and stir. Add a small amount of oil if needed. Saute an additional 5-6 minutes or until onions are softened. Open creamed corn and carrots (drain carrots)and add to onions and mushrooms. Add remaining Garam Masala and stir all together. Reduce heat to low and cover. Wash and pat dry the chicken breasts. With kitchen scissors, cut chicken breasts into cubes. Place in a medium heated pan with oil. Brown for 3-4 minutes and stir. Lightly sprinkle the chicken breast pieces with salt and pepper. Brown for 3-4 more minutes. Mix and brown 2 minutes longer, if need. Add chicken to vegetables and cook an additional 30 minutes on low heat with a lid. Stir occasionally so as not to stick. Serve as a stew with hot rolls or over rice/pasta.
