Healthy and Tasty Spicy Peanut PastaUser Submitted Recipe
1/2 a box of bowtie pasta
2 thawed chicken breasts, cut into bite sized pieces
2 large carrots grated
6 baby carrots grated
2 cups of broccoli, cut into bite sized pieces
1 medium onion, cut into small pieces and caramelized
2 T smooth peanut butter
2 T "lite" coconut milk
1 T lime juice
2 t soy sauce
1 t brown sugar
1/2 t crushed red pepper flakes
Cook the pasta until desired doneness.
Caramelize the onions and cook the chicken.
Drain the pasta and put it back into the pot. Add the chicken, onions, carrots and broccoli into the pot with the pasta.
As the pasta and chicken are cooking, you will have enough time to throw together the sauce. Whisk the peanut butter, coconut milk, lime juice, soy sauce, brown sugar and crushed red pepper until smooth.
Mix the sauce into the pasta chicken mixture. Keep it covered until served so it stays warm.
