Potato Pancakes

Better than those found in supermarkets or fairs and great with homemade grape jelly or homemade applesauce!"

Ingredients

1/4 C Milk
2 Eggs
3 C peeled/diced potatoes
1/4 t Baking Powder
1 small Onion, peeled and chunked
3 T Flour
1 t Salt


Instructions

Place in Cuisanart Processor or Blender all of above prepared ingredients and pulse until smooth.
Melt 2 T butter w/small bit of olive oil in large fry pan and pour batter as you would for pancakes - cook until well-browned. Serve with your grape jelly or applesauce. I serve with slices of bacon or ham.
